Old-time Oak Parker Patrick Barclay is starting a wood-fired pizza delivery truck, and he’s looking for a good name. Can you help?
I’ve known Patrick Barclay since high school, and for much of his life, he’s been a chef, working in restaurants or teaching cooking. Now, he’s going to become the pizzaiolo (pizza maker) at a new business he’s starting: a wood-fired pizza delivery truck. On this truck will be a wood-burning pizza oven and all the ingredients to turn out hand-crafted ‘za for a changing clientele of people from all over the area.
To get a sense of some of the everyday challenges of running a wood-fired pizza operation, Barclay and I visited Oak Parker John McLean’s Sono Wood Fired (1582 N. Clybourn), a beautiful pizza place located right across from the Clybourn Red Line stop (and the Apple store) on the Chicago’s near north side.
Pizzaiolo Geno Losacco is Sono’s man at the oven. From Bari, Losacco has a deft touch with the dough, the fire and toppings, turning out some subtly flavored and perfectly turned pies. Over a few glasses of Nero d’Avila, Barclay and me got some great tastes and some helpful insights into running a pizza business.
Now, all Barclay needs is a name for his company. He has a few possibilities, but I told him I’d throw it open to the readers of this blog. If you have an idea for a name of this new pizza business, you can post it here or email me at David@DCHammond.com.
